I don't make marinara. I make that on an as needed basis - fresh.
I make a thick, 'stand a spoon upright' in it thick basic sauce. This is a base for any sauce I want to create off that except vodka, marinara or other less thick and rich sauces.
I use hot and mild sausage.
Red pepper flakes go in depending on who is eating the food.
I toss the sausages in the sauce to let it cook for awhile if I want a meat taste in there or I will toss a few sausages into sauce that I've already jarred and warming up for that night's meal. Sometimes I toss meatballs and sausage in the sauce.
I'm not tossing meat in the sauce today. I'm not making meatballs today.
